This is a good point, there is currently no access to the caching for development sites. We will get this taken care of ASAP - so that you can do this in the future.

Yes, you can remove unused categories.
From the main console, select "Store" -> "Categories". From here you can select the empty category and then choose "Delete this category".
You can easily add it back if you need it again in the future.

They created their "account" with you on 8/11/2016 where they entered their name, email, address, etc. Once their account was created, every time they place an order, AllProWebTools uses the prior name, email, address, etc that was entered originally. Every subsequent order will use that contact info.
